Quick and Easy Vegan Spanakopita
This Spanakopita is healthy and super easy to make. All you need is 5 basic ingredients to make this popular Greek snack. With a few variations, nobody will be able to tell this is vegan.

- 1 tbsp oil
- 1/4 cup minced onion
- 4 garlic cloves
- 4 cups spinach
- salt and pepper to taste
- 1/4 cup vegan feta (optional)
- 6 sheets filo dough
- 1/2 cup melted vegan butter
Preheat oven to 375°F
In a pan, add oil and heat at medium heat. Once hot, add the onion and garlic and sauté until lightly brown. Add spinach and cook until wilted. Season to taste and set aside to cool. Add the vegan feta at this stage.
Take three sheets of filo dough and brush with melted butter. Using a pizza cutter, cut three strips about 3" wide across. Add 1 tbsp of filling to the bottom right hand corner. Fold across to make a triangle, then fold up. Repeat this until there is no filo dough left in the strip. Repeat with the other strips until you get 6 spanakopitas.
Place the triangles on a tray (seam-side down) and brush with vegan butter on top. Place in oven and bake for 15-20 minutes or until golden brown on top. Enjoy hot!
