Materials

  • 470 g (2 cups) warm water
  • 1/2 tsp sugar
  • 7 g (1 packet) instant yeast
  • 30 g (2 tbsp) olive oil
  • 680 g (5 1/4 cups) all-purpose or bread flour or a 50/50 split of the two
  • 1 1/2 tsp salt

Instructions

  • Add the flour, sugar, yeast, and salt into a mixing bowl. Whisk to mix together.
  • Make a well in the middle and add the olive oil and warm water. Using a spatula mix until a shaggy dough forms. pour onto a work surface and knead by hand until smooth (about 5-10 minutes).
  • Transfer to a clean bowl and cover with a damp towel. Let proof in a warm place for 2 hours.
  • Punch down and place on a lightly floured surface. Divide the dough into three and round into balls. Use immediately or place on a tray or plate in the fridge for 2-4 days. Remember to cover it with plastic wrap. Alternatively you could freeze it for up to a month..

How to bake

  • Preheat over to 450°F. If you have a pizza stone, let it preheat with the oven.
  • Let the dough rest on the counter for twenty minutes if taking it from the refrigerator. If not, go to the next step.
  • On a lightly floured surface, flatten the dough into a circle shape. Using your fingers, gently stretch your dough to desired thickness. Keep a border around the dough to create the crust.
  • To assemble, lightly brush olive oil over the dough. Ladle or spoon your desired pizza sauce, then add cheese or other toppings.
  • Bake for 15-20 minutes. Or until The crust is golden brown.
