- 5 cups Romaine Lettuce, chopped about 2 heads
- 1 small red onion, quartered and sliced if you only have big ones, use only half
- 1/2 cup grape or cherry tomatoes, cut in quarters
- 1/4 cup Kalamata olives, pitted
- 1/4 cup crumbled vegan feta I used the Follow your Heart brand
- 6-8 pepperoconi
Dressing
- 1/4 cup Extra-virgin olive oil
- 1/4 cup red wine vinegar or apple cider vinegar
- 3 tbsp lemon juice
- 1 tsp dried oregano
- salt and pepper to taste
Wash and chop the romaine. Add to a large salad bowl
Add the toppings on top
Make the dressing. Taste to adjust the seasonings. Serve on top or in a separate container (recommended especially if you are going to have leftovers)
Store in the fridge for 1-2 days
