Healthy Greek Salad

This salad is delicious, filling, and easy to make. This healthy Greek salad with olives, red onion, tomatoes, and feta cheese on top is a perfect combination of fresh ingredients and acidic flavors.

Materials

  • 5 cups Romaine Lettuce, chopped about 2 heads
  • 1 small red onion, quartered and sliced if you only have big ones, use only half
  • 1/2 cup grape or cherry tomatoes, cut in quarters
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup crumbled vegan feta I used the Follow your Heart brand
  • 6-8 pepperoconi

Dressing

  • 1/4 cup Extra-virgin olive oil
  • 1/4 cup red wine vinegar or apple cider vinegar
  • 3 tbsp lemon juice
  • 1 tsp dried oregano
  • salt and pepper to taste

Instructions

  • Wash and chop the romaine. Add to a large salad bowl
  • Add the toppings on top
  • Make the dressing. Taste to adjust the seasonings. Serve on top or in a separate container (recommended especially if you are going to have leftovers)
  • Store in the fridge for 1-2 days
