French Toast
This Vegan French toast recipe is easy to make and so delicious. The silken tofu makes a creamy texture and the black salt adds a slight eggy-ness. Combined with the aromatic spices and a vegan brioche and you have a winner.

- 150 g (3/4 cup) silken tofu
- 75 g (6 tbsp) sugar
- 20 g (2 tbsp) rice flour
- 1/8 tsp kala namak
- 150 g (3/4 cup) soy milk
- 1/2 tsp vanilla extract
- 1/8 tsp nutmeg
- 1/4 tsp cinnamon
- 4-6 3/4 inch slices of bread, preferably vegan brioche
- vegan butter, for frying
In a blender, add all the ingredients except the bread and butter. It should smell slightly eggy and sweet. Pour onto a large plate with raised edges
Heat a non-stick pan on medium heat and add a little butter around to crisp it up and prevent it from sticking.
Dip the bread for 30 seconds on each side to make sure the mixture soaks in. Put in the pan and cook until golden brown on each side.
Repeat with all the slices.
Serve with vegan butter, powdered sugar, and a drizzle of maple syrup. Yum!
- In my experience, brioche is the best bread for this French toast because it has a rich buttery flavor and is very soft. If you can't find vegan brioche, you can make your own. You can find the recipe here.
