Boba Tea with Homemade Tapioca Pearls
These Boba Pearls are bouncy in texture and sweet in flavor. All you need is brown sugar and tapioca starch to make these homemade tapioca pearls. Boil them and place them in your favorite tea for a homemade boba tea experience.

Tapioca Pearls
- 50 g dark brown sugar about 1/4 cup
- 60 g water about 1/4 cup
- 100 g tapioca starch sifted and divided into half
Brown Sugar Syrup
- 240 g water 1 cup
- 150 g dark brown sugar 3/4 cup
Making Tapioca Pearls
Heat the water and brown sugar for the tapioca pearls until the sugar is dissolved. Add 50 g of tapioca starch and mix until it becomes more sticky.
Take off heat and add the rest of tapioca starch. Pour onto a hard surface and knead until there is no more white streaks and all the tapioca is incorporated.
Divide into 8 peices and roll it into a thin log. Using your knife, cut your logs into 1 cm peices. Roll these peices into balls. Place in a bowl of tapioca starch to keep from sticking to eachother.
Cooking the Boba
Boil 20 times the amount of boba to water (if cooking 1/2 cup boba, you need 10 cups of water). Once boiling, sift the tapioca pearls and add to the water.
Once they float, lower the heat and cook for 20 minutes uncovered. Then turn off heat and cover for 20 more minutes.
Add the ingredients for the syrup to a saucepan and cook until it begins to thicken up. Set aside to cool.
After 40 minutes, add the boba to the syrup to rest for 20 minutes. After that, they are ready to be used.
