As a pie filling, it is my favorite. I have made mini vegan apple pies in the past, and today I am showing you how to make these apples into an apple hand pie, so no pie shell is needed! And they can be taken with you to eat on the go.

Ingredients for Vegan Apple Hand Pies
- Green Apples. These are the best for apple pies because it has natural acidity and balances sweet flavors.
- Brown Sugar. Brown sugar is sugar with molasses, which compliments the fall flavors.
- Agave. This is for the sugar wash. It helps it brown in the oven.
- Salt. Just a pinch will enhance the flavors.
- Butter. I used Earth Balance’s Vegan buttery sticks, which work great for baking. If you can only find salted vegan butter, then you can omit the salt in the recipe.
- Raw Turbinado Sugar. This is optional, but it is used to coat the outside of the hand pies and adds a nice crunch and a hit of sweetness.
Storing It and Extra Tips
You can store this in the fridge in an airtight container for up to four days. When ready to eat, heat it in a microwave to get it warm again.
To freeze, individually wrap each hand pie in plastic wrap or wax paper and put it in the freezer. It will last up to 6 months.

Vegan Apple Hand pies
Materials
- 1 recipe of vegan pie dough
- 3-4 medium green apples, peeled, cored, and cut into 1/2" cubes
- 4 tbsp vegan unsalted butter
- 1/8 tsp salt
- 1/2 cup brown sugar
- 1/2 tsp freshly ground nutmeg
Sugar Wash
- 1 tbsp agave or honey
- 1 tbsp water
- raw turbinado sugar for topping
Instructions
- In a pan, melt the butter. Add the apple cubes and stir to coat. Add the brown sugar, salt, cinnamon, nutmeg. Stir to combine.
- Cook on low heat while stirring until apples are softened. Remove from heat and let cool. You can store it in the fridge until ready to use. It should thicken.
- Preheat oven to 425°F
- On a lightly floured surface, start rolling 1/2 of the pie dough. Cut into desired shapes and lay on a parchment-lined sheet pan. I cut them into small rectangles, but you can do circles.
- Put filling in middle, be sure to leave 1/2" strips on all sides untouched, so you can lay another piece of dough on top to enclose the filling. Then use a fork to crimp the sides.
- Using a sharp knife, be sure to poke a slit on top to let the steam out. Or else it might explode.
- In a small bowl, mix together the sugar wash and brush on top. Then sprinkle the turbinado sugar on top.
- Bake for 20-25 minutes until a golden brown. Remove from oven and let cool for a few minute before enjoying.
