The Best Vegan French Toast

This Vegan French toast recipe is easy to make and so delicious. The silken tofu makes a creamy texture and the black salt adds a slight eggy-ness. Combined with the aromatic spices and a vegan brioche and you have a winner.

I love french toast. It is like an elevated breakfast toast. If I felt like making breakfast for the family, it was either waffles or french toast. It is filling, delicious, and easy to make.

Then when I cut eggs out of my diet, I had to relearn how to make some of my favorite dishes without eggs. French toast was one of them. I tried a few recipes, but they never hit the mark for me.

Not until I came across this recipe from the blogger and recipe developer, the school night vegan. His vegan french toast recipe hit all the boxes for me. It had a crispy edge, it was easy to make (all you had to do is put all the ingredients in the blender), and it tastes a little eggy (thanks to the black salt). And it was a hit for my family. They were all fighting for the last piece.

Vegan French Toast

Ingredients

  • Silken Tofu. This gives a creaminess to the mixture. It can be substituted with unflavored yogurt.
  • Rice Flour. This rice flour is from white rice. This is NOT glutinous rice flour.
  • Kala Namak also known as black salt, has a natural sulphuric smell that smells like eggs. It is really strong, so you don’t have to use much. This is optional and just to give your French toast an authentic eggy smell.
  • Soy Milk. You can use any non-dairy milk that is your favorite. I like soy milk for the extra protien.
  • Bread. If you can’t find vegan-friendly brioche, you can make it yourself (recipe here) or use another thick-cut piece of bread. I think it’s best to cut the slices yourself to control the thickness. If it’s too thin, it will fall apart in the French toast mixture.

French Toast

Materials

  • 150 g (3/4 cup) silken tofu
  • 75 g (6 tbsp) sugar
  • 20 g (2 tbsp) rice flour
  • 1/8 tsp kala namak
  • 150 g (3/4 cup) soy milk
  • 1/2 tsp vanilla extract
  • 1/8 tsp nutmeg
  • 1/4 tsp cinnamon
  • 4-6 3/4 inch slices of bread, preferably vegan brioche
  • vegan butter, for frying

Instructions

  • In a blender, add all the ingredients except the bread and butter. It should smell slightly eggy and sweet. Pour onto a large plate with raised edges
  • Heat a non-stick pan on medium heat and add a little butter around to crisp it up and prevent it from sticking.
  • Dip the bread for 30 seconds on each side to make sure the mixture soaks in. Put in the pan and cook until golden brown on each side.
  • Repeat with all the slices.
  • Serve with vegan butter, powdered sugar, and a drizzle of maple syrup. Yum!

Notes

  • In my experience, brioche is the best bread for this French toast because it has a rich buttery flavor and is very soft. If you can’t find vegan brioche, you can make your own. You can find the recipe here
