Pão de Queijo (Brazilian Cheese Bread)

This Brazilian cheese bread is easy to make and delicious. Crispy on the outside and gooey on the inside. Did I mention it’s also gluten-free? This bread will have you coming back for more.

In my culinary school, many students were Brazilian and they would sometimes bring their food to share. My palette was awakened to appreciate Brazilian food. I especially love their Brazilian cheese bread. I do not claim it will be as good as theirs, but I had a whole lot of fun making this.

The main ingredient is tapioca flour, which isn’t flour at all. It’s the starch from the cassava root. Making this recipe completely gluten-free.

Brazilian Cheese Bread

Ingredients for Brazilian Cheese Bread

  • Tapioca Flour. This recipe is naturally gluten-free thanks to the tapioca starch. This is a starch from the cassava plant. It’s not safe to eat raw. But when cooked, it has a chewy consistency.
  • Whole milk for the creaminess. You can also use water or plant milk.
  • Olive Oil. Make sure it is high quality because it will mess with the taste.
  • Cheddar cheese. The best way to incorporate this is by buying a bloc and grating it yourself. This might be extra work, but pre-shredded is actually coated in powder that prevents the cheese from melting, so it’s best to grate your own.
  • Egg

Materials

  • 1 1/2 cups tapioca flour
  • 2/3 cup whole milk
  • 1/3 cup Extra virgin olive oil
  • 1/2 cup cheddar cheese
  • 1 egg
  • 1 tsp salt

Instructions

  • Preheat oven to 400℉
  • In a blender, add tapioca flour, milk, EVOO, and egg into a blender. Blend until smooth.
  • Add cheese and blend for 15-30 seconds until it is broken down.
  • Spray a mini-muffin pan with oil. Add the batter until 3/4 of the way up.
  • Add some extra cheese on top of each one and bake for 20-25 minutes
