Easy Vegan Greek Salad

This salad is delicious, filling, and easy to make. This healthy Greek salad with olives, red onion, tomatoes, and vegan feta cheese on top is a perfect combination of fresh ingredients and acidic flavors.

I typically do not like salads because it is not filling enough or it is too bitter or the dressing overpowers everything. But one of the few salads I keep visiting is a Greek salad. The combination of the acid from the olives and pepperoncini to the freshness of the tomatoes and onions makes it delicious

Greek salad at Panera has always been my favorite. But it can get pricey, so it is easier and more economical to make it yourself and you can customize it any way you want.

So I set out to make it at home and I was glad to find out it is really easy. I hope you try it out yourself.

Vegan Greek salad

Ingredients

To make a really delicious Greek salad, these are the main components:

  • Romaine Lettuce.
  • Red onion. You can also use yellow onion.
  • Cherry or grape tomatoes
  • Kalamata Olives
  • Feta. You can use vegan feta or dairy feta. I perfer the ones that are already crumbled like the Follow your Heart brand.

To make a dressing, you will need:

  • Red wine vinegar. or Apple cider vinegar.
  • Extra-virgin olive oil. Make sure you get good quality olive oil. You can really taste the difference.
  • Mustard or mustard powder. For the mellow spice and body
  • Dried oregano or any other dried herbs you like.

Healthy Greek Salad

Materials

  • 5 cups Romaine Lettuce, chopped about 2 heads
  • 1 small red onion, quartered and sliced if you only have big ones, use only half
  • 1/2 cup grape or cherry tomatoes, cut in quarters
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup crumbled vegan feta I used the Follow your Heart brand
  • 6-8 pepperoconi

Dressing

  • 1/4 cup Extra-virgin olive oil
  • 1/4 cup red wine vinegar or apple cider vinegar
  • 3 tbsp lemon juice
  • 1 tsp dried oregano
  • salt and pepper to taste

Instructions

  • Wash and chop the romaine. Add to a large salad bowl
  • Add the toppings on top
  • Make the dressing. Taste to adjust the seasonings. Serve on top or in a separate container (recommended especially if you are going to have leftovers)
  • Store in the fridge for 1-2 days
