Pico de Gallo is a little spicy, but a so delicious mix of tomatoes, onions, and limes. It is fresh and a perfect accompaniment to tacos, burritos, or eating a spoonful just for yourself. It is so easy to make this quick side dish.

I love tacos and pico de gallo was always one topping I couldn’t do without. With the freshness of the uncooked vegetables, the slight bite with the jalapeno, and the tang from the lime juice, it works perfectly to contrast the rice, beans, and other taco fillings. It is so good on its own that I will take a small bowl for myself just to snack on.

If you are making fresh tortillas for taco night, then you have to make this recipe as well.

Ingredients

  • Onion. You can use yellow onion or red onion.
  • Tomatoes. As long as the tomatoes are red and medium-sized, they should work fine.
  • Jalapeno. It adds a pleasant spiciness, but you can omit if you are sensitive to it.
  • Cilantro. This adds a herbiness and a nice green color.
  • Lime. The acid in the lime juice takes away the bite from the onions.
  • Salt and Pepper.

Procedure

Prepare the ingredients.

Slice and cut the tomatoes, making sure to get rid of as many seeds as possible. Place it in the bowl. Mince the onion and cilantro add it as well.

Open the jalapeno and remove as many seeds as possible. (You can save these and plant them). Cut into small pieces.

Once you got the vegetables cut, mix them and add salt and freshly ground pepper. Lastly, squeeze 1/2 of a lime (about 1 tbsp) over on top. Taste and see how good it is.

Materials

  • 1/2 onion, minced
  • 3 medium tomatoes
  • 3 garlic cloves, minced
  • 1 jalapeno
  • 2 tbsp lime juice
  • 1 bunch of cilantro, minced
  • salt and pepper to taste

Instructions

  • Cut the onion, garlic, and tomato and add it to a medium-sized bowl.
  • Open up the jalapeno and remove the seeds. Cut it into small pieces and add it to the bowl as well.
  • Mix and add the lemon, salt, pepper, and minced cilantro. Taste to adjust the seasonings. Serve and enjoy!
