Easy Vegan Waffles

These waffles are easy to make with simple ingredients. Just stir all the ingredients together to make the batter and pour on the waffle iron. You will have a delicious stack of fluffy vegan waffles in no time.

Waffles are one of my favorite breakfast items. The iconic shape not only looks pretty, but it stores your maple syrup. It somehow makes it taste better. To make a vegan waffle, it needed to be several things. It needed to be crispy on the outside and fluffy on the inside.

Using baking powder and a flax egg, it binds the filling together while adding extra fiber and the baking powder adds air to the inside. The result is a healthy and delicious waffle that nobody would guess is vegan. Only a couple of ingredients are needed and none of them are super hard to find.

Ingredients for Easy Vegan waffles

  • Ground flaxseed. This will be the egg replacer. Mix 1 tbsp of flax with 2 tbsp water. Let sit for a few minutes and it will become thick and gloopy. Make sure you use ground flaxseed, but if you can’t find any, you can buy the flaxseed and grind it yourself in a food processor. You can also use the flax gel if you want.
  • Baking powder. This will make the waffles become airy and puff up in the waffle iron.
  • All-purpose Flour.
  • Sugar. For a nice sweetness. I use cane sugar because it is less processed but use any granulated sugar.
  • Vanilla Extract.
  • Oil. You want to use a neutral-flavored oil. Canola is my favorite to use, but sometimes I use coconut oil. This will also help it not stick to the waffle iron.
  • Plant-based milk. I use soy milk or oat milk, but you can use any vegan milk is your favorite.

How to make vegan waffles

Brush your waffle iron with some oil. I usually use canola or coconut oil. This helps it crisp on the outside and prevents it from sticking to the waffle iron.

Mix the flaxseed egg in a small bowl and set it aside. It will thicken up as you are gathering the rest of your ingredients.

In a large bowl, put in the flour, baking powder, salt, and sugar. Give that a quick whisk. Pour in the other ingredients, then finally add the flax egg.

Mix until just combined. If you mix it too much, it can turn gummy or tough.

Pour in the batter. I will not give you measurements for this because that will depend on the size of your waffle iron. Mine is a cute mini waffle iron that only holds 1/4 cup of batter.

Enjoy hot with vegan butter and maple syrup. Or if you have leftovers, you can put them in the freezer. Just make sure you cool it completely beforehand.

Extra Tips

Don’t overmix. You don’t want any gluten development because it will cause the waffles to be tough. In this recipe, you actually want a lumpy batter. This will make fluffier waffles.

Don’t overfill your waffle iron. It will expand as it cooks due to the baking powder.

The good thing about these waffles is that they are easily customizable. When you pour the batter into the waffle iron, feel free to add chocolate chips, blueberries, or any of your favorite toppings.

Instructions

  • Plug in the waffle iron to heat up.
  • Mix the flax egg together and set aside to thicken.
  • In a bowl, add the dry ingredients and mix them together. Then add the rest of the ingredients, including the flax egg. Mix just to combine.
  • Spray or lightly brush oil on your waffle iron. Add the batter and heat for a couple minutes until the waffle is golden brown. Remove and let cool.

Notes

If you have leftovers, you can put them in a freezer-safe bag and freeze it. Make sure it is completely cool before you freeze it.

    Hi Pearl,
    I try my best to not have sugar if it’s not that necessary. Would these waffles work if I didn’t add sugar? I’m wondering if the vanilla extract and syrup will make these sweet enough to eat.

      I haven’t tried it, but I think it would work. The color would be affected because the sugar causes the waffle to become golden brown, but that is just a cosmetic issue. Actually putting no sugar in waffles would be perfect for savory waffles (i.e chicken and waffles) or something similar to that. Happy cooking!
